spaghetti 'mbriachi (from ‘ubriachi’, meaning drunk, the vowel softened for no better reason than being easier on the ear). In cooking terms, spaghetti ubriachi is simply pasta sautéed in red wine, with onion. On taste terms, it’s good spaghetti, steeped in your favourite red wine, deep bodied and so very moreish with creamy onion, spoiled by a buttery finish (one of the few dishes we cook with butter).
